Oatmeal Date Chocolate-Chip Cookies (Kids Eat Them Up)

My family LOVES these oatmeal date chocolate-chip cookies!

And honestly, I really don’t care when the kids want one (as long as it’s not right before dinner of course). Because they are filled with goodness and really are pretty filling as a snack, paired with some kind of breakfast, or dessert after dinner.

They are so easy to make.

First mix up the butter and sugar in the mixer, then pour in the rest of the ingredients, mix it up, scoop them out, bake, and voila, cookies!

They’re also very versatile.

JAZZING UP OATMEAL DATE CHOCOLATE-CHIP COOKIES

I’ve used the base recipe and jazzed these cookies up in the following way:

  • turned these into lactation cookies
  • added nuts when making them as a gift for nut lovers
  • double chocolate chipped them by adding 2-3 tb of cacao powder to the mix
  • added protein powder – I really like Almond or the tasteless Vital Proteins
  • hemp hearts for more nutritional value
  • added cranberries
  • skipped the mini chocolate chips and used only chunks (my favorite)
  • skip the dates and add an additional 1/3 cup brown sugar
  • reduce the sugar by 1/3 and use the dates as the sweet bite
  • so many more things you could do!

As long as you use the base recipe, you can add anything you’d like.

Don’t like dates? No problem. Skip the dates, add in a little more brown sugar to make up for the sweetness, and they’re golden. That can also be flipped flopped… less sugar and just the dates, so the dates are the bite of sweetness you get.

One thing, these oatmeal date chocolate-chip cookies are kinda soft and crumbly. So if the kids are munching on them, you’ll definitely want them using a bowl! (we learned that the hard way) They pair so deliciously with our homemade almond milk too.

THE RECIPE

Oatmeal Date Chocolate-chip Cookies

The most delicious and versatile chocolate-chip cookies ever. Kids devour these, and we eat them up! So good paired with almond milk, regualr milk, hot tea, or coffee.

Ingredients
  

Wet Ingredients

  • 3/4 cup brown sugar
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 1 egg

Dry Ingredients

  • 1 cup quick cooking oats
  • 1/4 cup Pamela's gluten free flour (if want some gf)
  • 3/4 cup oat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp Himalayan sea salt
  • 1/4 cup chopped dates (optional)
  • 1/3 cup mini semi-dark chocolate chips (or chocolate chunks)
  • 2 tbsp hemp hearts (optional)
  • 1 scoop Almond or Vital Proteins protein powder (optional)

Instructions
 

  • Preheat oven to 350°
  • In a stand up mixing bowl add in the brown sugar and melted butter. Mix until a little frothy.
  • Add in the egg and vanilla, mix until well incorporated.
  • Add in the rest of the dry ingredients, except for the chocolate-chips and additional add ins. Mix until just incorporated, not too much so it doesn't get chewy.
  • Quickly mix in the add-ins, or stir in with a spatula.
  • Scoop onto your cookie tray and slightly flatten them as they don't spread out too much. I like to plop a few chocolate chips or chocolate chunks on top.
  • Bake at 350° for about 8-9 minutes or until lightly golden brown.
  • Store on the counter for up to a week or in the refrigerator.
